Day 5: The Fresh Diet

I did so much better than I do on a normal weekend! I almost cancelled my deliveries for the weekend and pushed them off to next week, thinking that I would be too off-schedule to really use them. But the opposite proved true – I didn’t eat McDonald’s with my family this morning and I didn’t feel deprived or left out either.


Whole Wheat Blueberry Waffles with Blackberries & Cinnamon Pear Cottage Cheese

I’m telling you – better than mcDonald’s breakfast! (Okay, maybe just as good and MUCH, MUCH healthier.) The waffles and blackberries were bursting with flavor. I was a little thrown by the cinnamon pear cottage cheese, but I ate it and it wasn’t bad. Added milk again this morning.


Chicken Cordon Blue with Ham & Swiss Cheese with Roasted Cauliflower and Sauteed Spinach

If this sounds a little heavy for lunch, it’s because it was actually intended to be dinner last night. It was quite good although I did add some garlic salt and pepper. Chicken cordon bleu isn’t actually a favorite of mine. I don’t do real well with the chicken and ham combination. Something about that just doesn’t seem right, but they did a good job of making a healthy version. The cheese was great.


Gingersnap Pumpkin Cheesecake

Went ahead and ate my dessert with my lunch because I knew we were going out for dinner. My opinion of the cheesecake is the same – it’s all good but none of the flavors taste any different than any of the others.


For dinner we ate out at The Cotton Patch, celebrating Riley’s upcoming 5th birthday with one set of grandparents. I was tempted to eat my usual chicken fried chicken with mashed potatoes. But I overrode that thought and ordered grilled pork chops with a salad and steamed broccoli.
