Day 3: The Fresh Diet
As you may have read on yesterday’s post, one of my readers commented that this seems like too little calories . . . especially since I am still nursing. I have to say I agree. I was told that this would be 1800 calories, but the dishes are marked 1200 – 1400. So today I supplemented and I am much fuller and happier tonight for it.
I was also excited to get on the Wii Fit and hear I had lost 4 lbs. It says your body can swing up to 2 lbs. different in the same day due to digestion, etc. But even if I’m just down 2 lbs. I’ll be happy with that.
Goat Cheese, Baby Spinach & Sun-Dried Tomato Omelet with Seven Grain Toast
This meal wasn’t bad at all. The egg dried out a bit when reheated and I did add a touch of butter to the bread again. The only negative with this meal was that I was still quite hungry after finishing. I added a banana . . . and sh! maybe a handful of peanut M’n’Ms.
Chicken Caesar Salad with Grape Tomato, Romaine Lettuce, Whole Wheat Croutons & Sun Dried Tomato with Caesar Dressing.
Another really good salad. This one did come with chicken, although the flavor bothered me. My solution was to stick this chicken in with the tequila lime glaze that was part of the chicken skewer.

Not so much a skewer as some chunks of chicken with a side of glaze, but this glaze was great and I enjoyed this with my lunch salad.
Butterscotch Chip Cookies
Still hungry after my lunch and my snack, I decided it was a good time for dessert. This cookie was much like a sugar cookie sprinkled with miniature butterscotch pieces, but it was good and I would have eaten more if I had any more. Instead I might have grabbed another handful of peanut M’n’Ms.

Everything in this meal was tasty, but it honestly all fit on a saucer! I inhaled it and then still needed the snack I didn’t eat yesterday.
Artichoke Bottoms Filled with Creamy Cauliflower
The problem was . . . the snack was not my cup of tea. Loved the mashed cauliflower yesterday, but didn’t love the artichokes today . . . and unfortunately the cauliflower inside them tasted like artichoke. I couldn’t finish this so it didn’t help fill me up.
As a last resort, I had my husband make me one of the quesadillas he was making. It wasn’t too unhealthy we did use flour tortillas, but we used Pam to sautee the onions and the chicken was smoked on the smoker in the backyard. He heated everything up in the microwave and then browned it – without any butter – on the griddle. Finally, I was full!
