Day 2: The Fresh Diet
Second day on the diet and the first full day I knew I would be around the house. I thought today was a good day to try to do the diet they way it is intended – eating only the Fresh Diet food and nothing else. It didn’t work well. I was starving all day long. Because I didn’t get full on these foods, I grabbed unhealthy fillers. I think I’ll do better if I go back to eating their foods as a “part” of the regular healthy eating choices I’ve been trying to make.
Cinnamon Swirl Multi-Grain French Toast with Fresh Apples and Blackberry Ricotta Cheese.
The French toast was very good, but I was frustrated that it wasn’t even one whole piece of bread. It was also way too dry as it came, so I used just a touch of butter after heating it up. The apples were good. There were about 6 slices – not wedges, thin slices not even as thick as a knife blade. And I’m still not a fan of the ricotta cheese dip.
Greek Salad with Bulgarian Feta Cheese, Cucumber, Yellow & Green Tomato, Romaine Lettuce & Basil Vinaigrette
The salads from Fresh Diet have been incredible. This one was no exception. However, I didn’t realize it didn’t have any kind of meat until I was taking it out to eat. I did NOT get full on this, so I pulled out my leftovers from yesterday and ate them as well.
Spicy Chickpea Patty with Cilantro Lime and Green Chillies. with Curried Cauliflower Mash and Grilled Asparagus
To be honest, I didn’t know what a Chickpea patty was when I ordered this. It was supposed to be covered by the chili sauce, but the sauce smelled more like bell peppers than chilies, cilantro or lime so I actually didn’t use it at all. I loved the cauliflower mash – similar to mashed potatoes, but healthier – and the grilled asparagus. I added just a bit of salt and pepper, heated it according to instructions and ate every last bite.
Red & Yellow Tomato with Goat Cheese & Fresh Basil
Unfortunately, there was no yellow tomato part of this dish. Apparently my calorie count only allows for one tomato slice and the one I got was red. It tasted very good even though I had let it sit in the fridge an additional day.
Stuffed Chicken Asiago & Tarragon with Whole Wheat Linguine Pasta and Roasted Fennel
The stuffed chicken asiago was good. It was nice to finally have meat! There were only a few noodles included, but they were quite good. Now the roasted fennel and I struggled. I couldn’t figure out how to eat it and I’m pretty sure I’ve never had fennel before in my life. It has a pretty strong flavor, kind of like a sweet onion maybe. But the texture is different more like a cooked artichoke I think. I wasn’t sure if I was supposed to eat the whole thing or not, so I kind of picked at this.
Artichoke Bottoms Filled with Creamy Cauliflower

Apple Cinnamon Cheese Cake
This cheesecake was clearly not real cheesecake, but it was good nonetheless. I enjoyed every bite of this and wish I had the recipe!
